whole wheat biscuits

delicious and nutritious
[preparation time: 20 minutes]

yield: 9 biscuits
2 cups whole wheat pastry flour
scant 1/2 tsp salt
3 tsp baking powder
2 TB cold butter
7/8 cup plain yogurt or 3/4 cup milk

yield: 4 biscuits
1 cup whole wheat pastry flour
scant 1/4 tsp salt
1 1/2 tsp baking powder
1 TB cold butter
scant 1/2 cup plain yogurt or 3/8 cup milk

preheat oven to 400°

mix the dry ingredients together and then cut in the butter. mix thoroughly into the flour by rubbing pieces of butter with the flour between your fingers, dropping, and doing another bit. the mixture should resemble sand when you are through.

stir in the yogurt or milk and mix until it holds together. knead the dough 10 times.

press into a 3/4 inch rectangle and cut into 4 (or 9) squares. bake for 12 minutes.
