sweet and sour carrots
a quick and delicious pickle
[preparation time: about 20 minutes with a food processer]
yield: about 1 quart
3/4 cup of water
3/4 cup of sugar
3/4 cup of white vinegar
1 TB mustard seeds
2 1/2 inches of cinnamon stick
about 1 pound of carrots, sliced or cut into matchsticks
Combine everything but the carrots in a saucepan and stir over heat until the sugar melts. Add carrots and simmer for 15 minutes (5 if you are using very thin slices). Cool, chill, and store in jars in the refrigerator.
