Tex-Mex Vegetarian Chili
Madhur says "I love chili, and this is about as good as it gets" and she's right. Delicious. I will definitely make this again. Some notes:
- One half a jalapeno gives a pleasant heat, but doesn't really make it hot.
- I don't think the cilantro (added before cooking) adds any flavor at all. Next time, I'll use it as a garnish.
- The recipe calls for 1 cup of cooked kidney beans and I found that to be too few. Next time I'll use 1 cup of uncooked kidneys.
- Served with cheese melted on the top, I found the spicing to be too mild. I like this with no dairy to mellow the blend of spices. If I were planning to use sour cream or cheese as a topping the next time, I might use 1 1/2 or even double the amounts given for the seasonings.
