» Cook's Illustrated Magazine, The Best Recipe, page 133. — Very Good.

I like this recipe, and the sherry variation. I use 1 tsp of liquid smoke instead of the ham hock. I often use only 1 green bell pepper, one half for the beans and one half for the sofrito. I've made much more complicated recipes, but for some reason this one feels a little fussy. I think Black Beans Charro—though spiced differently—is a better "everyday" black bean recipe. [ 09.22.06 ]
