Lemon Shallot Vinaigrette

» Alice Waters, Chez Panisse Vegetables, page 262. — Outstanding.

Simple, delicious. I used White Wine vinegar instead of Champagne Vinegar, and I may have used a bit too much oil. Regardless, this is an outstanding dressing. I especially suggest it for green salads, as it has a lovely, delicate flavor that may not be experienced to best advantage against more assertive vegetables like tomato. Update: I'm upgrading this rating to "Outstanding". I used it on various things it for a week, and never got tired of it. This is one of my new basics. [ 07.25.06 ]
