marinated mushrooms
a quick and delicious side dish
[preparation time: about 20 minutes]
yield: about 1 quart
1 C red wine
1/2 C red wine vinegar
1/3 C olive oil
2 TB brown sugar
2 cloves garlic
1 tsp crushed red pepper flakes
1 lb mushrooms, washed and dried
1/4 C green onions
1/4 tsp dried oregano
1/2 tsp salt
1/4 tsp ground black pepper
Combine first 7 ingredients over medium heat. Bring to boil, off heat, then add the last 4 ingredients. Pour into jars and store in refrigerator. Allow to marinate at least overnight. Serve chilled or at room temperature.
